Dulce de leche, also known as "milk jam" in some countries, is a beloved caramel-like spread in Argentine cuisine. Made by simmering milk and sugar together for hours, this rich and creamy sauce is perfect for spreading on bread, filling pastries, or drizzling over ice cream. With a flavor similar to caramel but more complex, dulce de leche is versatile in various desserts, from cakes to cookies. Its origins trace back to Argentina and Uruguay, possibly influenced by Spanish colonizers or indigenous people. Rich in calcium and energy, this treat embodies the essence of Argentine culinary tradition and has gained global popularity.

This iconic Argentine dessert, known for its thick, creamy texture, is made by combining milk, sugar, and a touch of baking soda, then simmering the mixture for 1.5 to 2 hours until it thickens and turns a rich caramel color. Dulce de leche can be used in a multitude of ways: as a spread on bread, a filling for pastries and cakes, or a topping for ice cream and other desserts. Nutritionally, it is rich in calcium from the milk and provides energy due to its sugar content, though it should be consumed in moderation because of its high sugar levels.

The origins of dulce de leche are rooted in Argentine and Uruguayan culinary history, with possible influences from Spanish colonizers or indigenous practices. It has become a significant part of Argentine cuisine and culture, often featured in traditional desserts like alfajores and churros. Making homemade dulce de leche can be a rewarding experience, allowing for a deeper appreciation of this beloved treat. Whether found in supermarkets or made at home, dulce de leche continues to be a favorite across the globe.

Ingredients:

1- 1 quart (4 cups) of whole milk

2- 1 1/4 cups of granulated sugar

3- 1/2 teaspoon of baking soda

4- 1 teaspoon of vanilla extract (optional)

Instructions:

1- In a heavy-bottomed pot, combine the milk, sugar, and baking soda.

2- Cook the mixture over low heat, stirring constantly, until the sugar has dissolved.

3- Increase the heat to medium-low and continue to stir the mixture occasionally to prevent it from burning.

4- After about 30 minutes, the mixture will begin to thicken and turn a light caramel color. At this point, you will need to stir more frequently to prevent the mixture from sticking to the bottom of the pot.

5- Continue to cook the mixture until it is a deep caramel color and has thickened to the consistency of pudding, which should take about 1 1/2 to 2 hours.

6- Remove the pot from the heat and stir in the vanilla extract, if using.

7- Transfer the dulce de leche to a jar or container and let it cool to room temperature before refrigerating.

Note:

Be careful when stirring the mixture, as it will be very hot and can splatter. You can also use a double boiler to cook the mixture more slowly and evenly.
