Ingredients:

For the Marinade:

  • 2 lbs (about 1 kg) beef steak (such as skirt steak or flank steak)
  • 1/4 cup soy sauce
  • 1/4 cup Worcestershire sauce
  • 1/4 cup lime juice
  • 4 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and black pepper to taste

For Serving:

  • Cooked rice
  • Cooked black beans
  • Corn or flour tortillas
  • Chopped cilantro, for garnish
  • Lime wedges, for garnish

Instructions:

1- In a large bowl, combine soy sauce, Worcestershire sauce, lime juice, minced garlic, ground cumin, paprika, salt, and black pepper to create the marinade.

2- Place the beef steak in a shallow dish or a large resealable plastic bag. Pour the marinade over the steak, ensuring it is evenly coated. Cover the dish or seal the bag and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to penetrate the meat.

3- Preheat your grill to medium-high heat.

4- Remove the marinated steak from the refrigerator and let it come to room temperature for about 30 minutes.

5- Once the grill is hot, remove the steak from the marinade and discard any excess marinade. Place the steak on the grill and cook for about 4-5 minutes per side for medium-rare, or longer according to your desired level of doneness.

6- While the steak is grilling, you can also heat up your cooked rice and black beans.

7- Once the steak is done, transfer it to a cutting board and let it rest for a few minutes before slicing it thinly against the grain.

8- Serve the grilled beef slices with cooked rice, black beans, and warm tortillas. Garnish with chopped cilantro and lime wedges.

9- Enjoy your Guatemala Churrasco with the delicious combination of flavors and textures!
