Ingredients:

- 1 lb (450g) pork shoulder, cut into chunks

- 1/2 lb (225g) pork fat, cut into chunks

- 1 cup (240ml) heavy cream

- 1/2 cup (120ml) milk

- 1/2 cup (50g) breadcrumbs

- 1 small onion, finely chopped

- 2 cloves garlic, minced

- 1 egg

- 1 tsp salt

- 1/2 tsp white pepper

- 1/4 tsp ground nutmeg

- 1/4 tsp ground cloves

- Sausage casings (natural or synthetic)

Instructions:

Prepare the Casings: Rinse the sausage casings in cold water and soak them according to the package instructions. Set aside.

Cook the Aromatics: In a skillet, sauté the chopped onion and minced garlic over medium heat until softened and translucent. Set aside to cool.

Grind the Meat: Using a meat grinder, grind the pork shoulder and pork fat through a medium-hole plate into a large bowl.

Stuff the Sausages: Rinse the sausage casings thoroughly and slide them onto the sausage stuffer. Fill the casings with the sausage mixture, being careful not to overfill. Twist sausages into 6-inch links and tie the ends with kitchen twine.

Cook the Sausages: Bring a large pot of water to a boil. Reduce heat to a simmer and cook the sausages for about 20-30 minutes, or until they reach an internal temperature of 160°F (71°C). Let them cool.
