Instructions:

1- In a large mixing bowl, combine the ground pork with white vinegar, achiote paste, minced garlic, paprika, dried oregano, ground cumin, chili powder, salt, black pepper, ground cloves, and ground cinnamon. Mix well until all the ingredients are evenly distributed throughout the pork.

2- If using natural hog casings, prepare them according to the package instructions. Rinse the casings thoroughly and soak them in warm water for about 30 minutes to soften.

3- If not using casings, shape the seasoned pork mixture into sausage-like links, about 4 inches long. Use your hands to form them into uniform shapes.

4- If using casings, thread one end of the casing onto a sausage stuffing tube or a funnel. Leave about 6 inches of casing hanging off the end. Stuff the casing with the seasoned pork mixture, being careful not to overstuff. Twist the sausage into links every 4 inches or so. Continue until all the pork mixture is used up.

5- Whether using casings or not, let the chorizos rest in the refrigerator for at least 2 hours, or preferably overnight, to allow the flavors to meld.

6- Preheat your grill to medium-high heat. Grill the chorizos for about 5-7 minutes per side, or until they are fully cooked through and have a nice charred exterior.

7- Serve the grilled chorizos hot off the grill with warm tortillas and your favorite toppings or condiments, such as salsa, guacamole, or diced onions and cilantro.
