Ingredients:
- 2 lbs (about 900g) boneless, skinless chicken thighs or breasts, cut into chunks
- 1/4 cup plain yogurt
- 3 tablespoons olive oil
- Juice of 2 lemons
- 2 cloves garlic, minced
- 1 teaspoon ground saffron threads (dissolved in 2 tablespoons hot water)
- 1 teaspoon ground turmeric
- 1 teaspoon ground black pepper
- 1 teaspoon salt, or to taste
- Skewers, soaked in water if wooden
Instructions:
1- In a large mixing bowl, combine the plain yogurt, olive oil, lemon juice, minced garlic, dissolved saffron, turmeric, black pepper, and salt. Mix well to form a smooth marinade.
2- Add the chicken chunks to the marinade, ensuring they are evenly coated. Cover the bowl with plastic wrap or a lid and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the chicken to tenderize.
3- Preheat your grill to medium-high heat.
4- Thread the marinated chicken chunks onto the skewers, leaving a little space between each piece.
5- Place the skewers on the preheated grill and cook for about 5-7 minutes on each side, or until the chicken is cooked through and has nice grill marks, basting occasionally with any leftover marinade.
6- Once the chicken is cooked, remove the skewers from the grill and let them rest for a few minutes before serving.
