Ingredients

Directions

  1. Rinse the Hibiscus: Place the dried hibiscus flowers in a fine-mesh sieve and rinse them thoroughly under cold running water. This helps remove any dust or small debris.
  2. Combine & Simmer: In a large saucepan, combine the rinsed hibiscus flowers, 6 cups of water, and the sliced ginger (if using). Bring the mixture to a gentle boil over medium-high heat.
  3. Steep & Infuse: Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 10-15 minutes. This allows the hibiscus to fully release its vibrant color and tart flavor.
  4. Strain: Carefully remove the saucepan from the heat. Place a fine-mesh sieve or a colander lined with cheesecloth over a large heatproof bowl or pitcher. Pour the hibiscus mixture through the sieve, pressing gently on the solids to extract as much liquid as possible. Discard the spent hibiscus flowers and ginger.
  5. Sweeten & Dilute: While the hibiscus concentrate is still warm, stir in the granulated sugar until it completely dissolves. Taste and adjust the sweetness to your liking. Add the remaining 2 cups of cold water to dilute the drink to your preferred strength. If using, stir in the lime or lemon juice now.
  6. Chill: Allow the Bissap to cool to room temperature, then transfer it to a pitcher or airtight container. Refrigerate for at least 2 hours, or until thoroughly chilled.
  7. Serve: Serve your refreshing Bissap over ice, garnished with fresh mint sprigs or lime slices, if desired. Enjoy!
