  2. De-seed in Water: Fill a large bowl with water. Hold a pomegranate half cut-side down in the water and gently flex and break apart the sections. The arils will sink to the bottom, while the white pith will float, making it easy to skim off.
  3. Blend Briefly: Drain the arils and transfer them to a blender. Add the optional cold water. Blend for no more than 15-20 seconds. A short blend is key to extract the juice without pulverizing the bitter white seeds inside the arils.
  4. Strain to Desired Texture: Place a fine-mesh strainer over a large measuring cup or bowl. Pour the blended pomegranate mixture into the strainer. Use the back of a spoon to press down on the pulp, extracting as much juice as possible. Do not grind the pulp into the strainer, as this can force bitter seed particles through. For an even smoother juice, you can strain it a second time or use a nut milk bag.
  5. Taste & Adjust: Taste your freshly strained pomegranate juice. If desired, stir in the optional lemon or lime juice for brightness, honey or maple syrup for sweetness, and/or a tiny pinch of salt to enhance the fruit's natural flavor.
