Ingredients:
- 500g herring fillets, cleaned and deboned
- 2 large onions, thinly sliced
- 3 large potatoes, peeled and thinly sliced
- Salt and pepper to taste
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1 sheet of ready-made puff pastry
- 1 egg, beaten (for egg wash)
Instructions:
1- Preheat your oven to 200°C (400°F).
2- In a large skillet, heat the butter and olive oil over medium heat. Add the sliced onions and cook until softened and slightly caramelized, about 8-10 minutes. Remove from the skillet and set aside.
3- In the same skillet, add a bit more olive oil if needed and lightly fry the herring fillets for about 2-3 minutes on each side until they are just cooked through. Remove from the skillet and let them cool slightly.
4- Roll out the puff pastry sheet on a lightly floured surface and line a greased pie dish with it, leaving some excess pastry hanging over the edges.
5- Layer half of the sliced potatoes on the bottom of the pastry-lined dish. Season with salt and pepper.
6- Spread half of the caramelized onions over the potatoes.
7- Arrange the herring fillets on top of the onions, covering the entire surface.
8- Repeat the layering process with the remaining potatoes and onions.
9- Fold the excess pastry over the top of the pie, sealing the edges. You can crimp the edges with a fork for a decorative finish.
10- Brush the top of the pastry with beaten egg to give it a golden shine.
11- Make a few small slits on the top of the pie to allow steam to escape during baking.
12- Place the pie in the preheated oven and bake for 35-40 minutes, or until the pastry is golden brown and crisp.
13- Once baked, remove the pie from the oven and let it cool for a few minutes before slicing and serving.
Enjoy your traditional Isle of Man Herring Pie with a side of fresh salad or steamed vegetables for a hearty meal!
