Ingredients:

For the Filling:

- 1 lb (450g) ground beef

- 1 onion, finely chopped

- 2 cloves garlic, minced

- 1 cup (240ml) beef broth

- 2 tbsp Worcestershire sauce

- 1 cup (150g) frozen peas and carrots mix

- 2 tbsp all-purpose flour

- 2 tbsp vegetable oil

- Salt and black pepper, to taste

- 1 tsp dried thyme or rosemary (optional)

For the Pie Crust:

- 2 1/2 cups (320g) all-purpose flour

- 1 cup (225g) unsalted butter, cold and cubed

- 1/4 cup (60ml) ice water

- 1/2 tsp salt

Instructions:

Prepare the Pie Crust:

- In a large bowl, combine flour and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

- Gradually add ice water, a tablespoon at a time, mixing until the dough comes together.

- Divide the dough into two portions, shape into discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Make the Filling:

- Heat vegetable oil in a large skillet over medium heat. Add the chopped onion and garlic, and sauté until softened.

- Add the ground beef, breaking it up with a spoon, and cook until browned.

- Stir in the flour and cook for 1-2 minutes to remove the raw flour taste.

- Gradually add beef broth and Worcestershire sauce, stirring constantly. Bring to a simmer and cook until the mixture thickens.

- Add the frozen peas and carrots, and season with salt, black pepper, and dried thyme or rosemary. Remove from heat and let cool.

Assemble the Pie:

- Preheat the oven to 375°F (190°C).

- Roll out one portion of the dough on a lightly floured surface to fit a 9-inch pie dish. Transfer the dough to the pie dish, trimming any excess.

- Fill with the cooled meat mixture.

- Roll out the second portion of dough and place over the filling. Trim, seal the edges, and cut a few slits in the top for steam to escape.

  5. Brush the top with a little milk or beaten egg for a golden finish.

Bake the Pie:

- Bake in the preheated oven for 45-50 minutes or until the crust is golden brown and the filling is bubbly.

- Let the pie cool for a few minutes before serving.

Enjoy your homemade meat pie, a comforting and delicious dish perfect for any occasion!
