Ingredients:

For the pastry:

Instructions:

1- Preheat your oven to 375°F (190°C).

2- In a large skillet or frying pan, heat the vegetable oil over medium heat. Add the beef pieces and brown them on all sides. Remove the beef from the pan and set it aside.

3- In the same pan, add a little more oil if needed, and sauté the diced onion, garlic, carrots, and celery until they are softened, about 5-7 minutes.

4- Sprinkle the flour over the vegetables and stir well to coat. Cook for another minute or two to cook off the raw flour taste.

5- Gradually pour in the beef stock while stirring constantly to avoid lumps. Add Worcestershire sauce, salt, pepper, and fresh thyme leaves if using. Bring the mixture to a simmer, then add the browned beef back into the pan. Allow the mixture to simmer gently for 10-15 minutes until it thickens slightly. Remove from heat and let it cool slightly.

6- While the filling is cooling, prepare the pastry. In a large bowl, combine the flour and salt. Add the cold cubed butter and use a pastry cutter or your fingertips to rub the butter into the flour until the mixture resembles coarse crumbs. Gradually add the ice water, a tablespoon at a time, mixing until the dough comes together.

7- Divide the pastry dough into two equal portions, one slightly larger than the other. Roll out the larger portion on a lightly floured surface to fit the bottom and sides of a pie dish. Carefully place the rolled-out pastry into the pie dish.

8- Pour the cooled beef filling into the pastry-lined dish.

9- Roll out the remaining pastry to fit the top of the pie. Place it over the filling and crimp the edges to seal. Use a sharp knife to make a few small slits in the top crust to allow steam to escape.

10- Brush the top of the pie with beaten egg for a golden finish.

11- Bake the pie in the preheated oven for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.
