Ingredients:

Beef and Broth:

1 clove of garlic

kg ready-to-use beef

Water for boiling the beef

1 tomato

Bay leaves

1 garlic clove

1 onion, peeled

Rice:

cups Egyptian rice

tbsp ghee (clarified butter)

liters of cow or buffalo milk

Salt to taste

Black pepper to taste

Zucchini and Tomato Sauce:

2 onions

1 garlic clove

4 tbsp vegetable oil

1 tbsp ghee

3 tbsp tomato paste

1 kg zucchini

Additional:

Broth from the cooked beef and vegetables

Instructions:

1-Start by boiling the beef: Place the beef in a pot and add boiling water until it covers the meat.

2-Let it boil for 10 minutes to remove impurities, then drain the water.

3-In another pot, add boiling water, a tomato, bay leaves, garlic clove, and a peeled onion.

4-Let it boil for 5 minutes.

5-Strain the beef from its water and add it to the clean water with the boiled vegetables.

6-Season with salt and black pepper to taste.

7-Allow it to boil for approximately 1.5 hours until the meat is tender.

Prepare the Rice:

8-Rinse 3 cups of Egyptian rice until the starch is removed.

9-In a baking dish, mix the rice with 2 tbsp of ghee.

10- Heat 2 liters of milk until warm and pour it over the rice.

11-Mix well and bake in the oven at 180°C for 15-20 minutes until the rice is cooked.

Prepare the Zucchini and Tomato Sauce:

12-In a pan, sauté 2 chopped onions and 1 garlic clove in 4 tbsp of vegetable oil and 1 tbsp of ghee.

13-After 5 minutes, add 3 tbsp of tomato paste and mix well.

14-Add the cooked zucchini to the tomato sauce mixture and stir.

Finish the Casserole:

15-Incorporate the beef into the vegetables and add the broth.

16-Simmer until the vegetables are tender.

17-Serve the beef and zucchini casserole over the baked rice.
