Chamorro-Style BBQ Marinated Grilled Meats

Ingredients:

For the marinade:

Instructions:

1- In a mixing bowl, combine all the marinade ingredients - soy sauce, brown sugar, pineapple juice, ketchup, vinegar, minced garlic, black pepper, ground ginger, onion powder, paprika, and chili powder (if using). Stir well until the sugar is dissolved.

2- Divide the marinade into three equal parts. Place each type of meat (chicken thighs, beef ribs, and pork spare ribs) into separate resealable plastic bags or shallow dishes.

3- Pour one portion of the marinade over each type of meat, making sure it's evenly coated. Seal the bags or cover the dishes and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to penetrate the meat.

4- Preheat your grill to medium-high heat (about 375-400°F/190-200°C).

5- Remove the marinated meats from the refrigerator and let them sit at room temperature for about 20-30 minutes before grilling.

6- Drain excess marinade from the meats and discard the marinade used for soaking.

7- Place the meats on the preheated grill and cook, turning occasionally, until they are cooked through and nicely charred on the outside. Cooking times will vary depending on the type and thickness of the meat. Chicken thighs usually take about 6-8 minutes per side, while ribs may take 20-30 minutes per side.
