  - 5 gallons (19 liters) of water

  - Priming sugar for bottling (if bottling)

Instructions:

1- Steep the Crystal, Munich, and Victory malts in about 3 gallons (11 liters) of water at 150°F (65°C) for 30 minutes. This is known as a mini-mash and helps extract flavors and colors from the grains.

2- Remove the grains and bring the liquid to a boil. Once boiling, remove the pot from heat and stir in the pale malt extract until completely dissolved.

3- Return the pot to the heat and bring it to a rolling boil. Add the East Kent Goldings hops and boil for 60 minutes, stirring occasionally.

4- After 60 minutes, add the Fuggle hops and Irish Moss and boil for an additional 15 minutes.

5- After the total boiling time of 75 minutes, turn off the heat and cool the wort as quickly as possible. You can use a wort chiller or an ice bath.

6- Once the wort is cooled to around 70°F (21°C), transfer it to a sanitized fermenter and top up with enough water to reach 5 gallons (19 liters) of volume.

7- Pitch the yeast into the fermenter and seal it with an airlock. Place the fermenter in a cool, dark place with a stable temperature around 65-70°F (18-21°C).

8- Allow the beer to ferment for about 1-2 weeks, or until fermentation activity has ceased and the beer has reached its final gravity.

9- Once fermentation is complete, you have the option to bottle the beer with priming sugar for carbonation or keg it directly.

10- If bottling, carefully transfer the beer to sanitized bottles, leaving behind any sediment at the bottom of the fermenter. Cap the bottles and allow them to carbonate for 1-2 weeks at room temperature before chilling and enjoying.

11- If kegging, transfer the beer to a sanitized keg, carbonate to your desired level, and serve chilled.
