Ingredients:
- 500g fresh langoustines
- 500g large prawns
- 500g clams
- 500g mussels
- 4 cloves garlic, minced
- 1 onion, finely chopped
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 tomatoes, diced
- 1/2 cup dry white wine
- 1/4 cup olive oil
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Crusty bread, for serving
Instructions:
1- Rinse the clams and mussels under cold water, scrubbing off any dirt or debris. Discard any that are open and do not close when tapped.
2- In a large pot, heat the olive oil over medium heat. Add the minced garlic and chopped onion, sautéing until softened and fragrant, about 2-3 minutes.
3- Add the diced bell peppers and tomatoes to the pot, and cook for another 5 minutes until the vegetables have softened.
4- Pour in the white wine and bring it to a simmer. Allow it to cook for a couple of minutes to let the alcohol evaporate slightly.
5- Add the clams and mussels to the pot, cover with a lid, and cook for about 5-7 minutes, or until the shells have opened. Discard any clams or mussels that do not open.
6- While the clams and mussels are cooking, prepare the langoustines and prawns. If desired, you can grill or pan-sear them with a little olive oil, salt, and pepper until they are cooked through and slightly charred on the edges.
7- Once the clams and mussels are cooked, remove them from the pot and arrange them on a large serving platter.
8- Arrange the cooked langoustines and prawns on the same platter with the clams and mussels.
9- Pour the remaining cooking liquid from the pot over the seafood on the platter.
10- Garnish the Galicia Mariscada with chopped fresh parsley and serve immediately with crusty bread on the side.
Enjoy your Galicia Mariscada, a delightful seafood feast showcasing the flavors of the sea from the Galician coast!
