- 2 potatoes, diced
- 1 chayote squash, diced
- 1 ear of corn, cut into rounds
- 1 green bell pepper, chopped
- 1 tomato, chopped
- 1/4 cup fresh cilantro, chopped
- 6 cups beef broth
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- Optional: cooked rice or tortillas for serving
Instructions:
1- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened and fragrant, about 2-3 minutes.

3- Pour in the beef broth and bring the mixture to a boil. Reduce the heat to low and let the soup simmer for about 30 minutes, or until the beef is tender.
4- Once the beef is tender, add the sliced carrots, diced potatoes, diced chayote squash, corn rounds, chopped bell pepper, and chopped tomato to the pot.
5- Simmer the soup for an additional 20-25 minutes, or until the vegetables are tender.
6- Stir in the chopped cilantro and adjust the seasoning with salt and pepper to taste.
