Ingredients:
- 500g ground lamb or beef (a mix of both can also be used)
- 1 medium onion, grated
- 2 cloves garlic, minced
- 1 teaspoon ground turmeric
- 1 teaspoon ground sumac (optional)
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon plain yogurt (optional, for added moisture)
- Olive oil, for brushing
Instructions:
1- In a large mixing bowl, combine the ground meat with grated onion, minced garlic, turmeric, sumac (if using), cumin, salt, black pepper, and yogurt (if using). Mix well until all the ingredients are evenly incorporated into the meat.
2- Cover the bowl with plastic wrap and let the meat mixture marinate in the refrigerator for at least 1 hour, or preferably overnight, to allow the flavors to meld together.
3- Preheat your grill to medium-high heat. If you're using wooden skewers, soak them in water for about 30 minutes beforehand to prevent them from burning.
4- Take handfuls of the meat mixture and mold them onto the skewers, pressing firmly to ensure they adhere well. Shape them into long, sausage-like shapes, about 1/2 inch thick.
5- Brush the skewered meat with olive oil to prevent sticking and help with browning.
6- Place the skewers on the preheated grill and cook for about 4-5 minutes on each side, or until the meat is cooked through and nicely browned on the outside.
7- Once cooked, remove the skewers from the grill and let them rest for a few minutes before serving.
8- Serve the Kabab Koobideh hot, accompanied by freshly baked flatbread, grilled vegetables, and a side of yogurt or tahini sauce, if desired.
